Kohlrabi kimchi


Kimchi is a traditional Korean dish that is spicy pickled (or fermented) cabbage. It's often richly spiced and extremely flavorful and used as a condiment. Kohlrabi is the German word for cabbage, and although kohlrabi often looks different from our regular cabbages, it can be quite similar in taste and texture. This recipe is for kohlrabi kimchi, however you can make this with regular cabbage. Fermenting things can bring out nutrients that we didn't have access to in the food before, and kimchi is an incredible probiotic and promotes regular and healthy digestion. It is also rich in vitamins A, B and C that can be hard to access in the winter months if you are "eating with the seasons" in Canada. Here are some great recipes that use kimchi!
