Here is what your kale looked like in the spring before it was planted.

We want to warming welcome you to your first week of shares here at TapRoot Farm. We are going to work hard to have your shares fresh and beautiful every week, and are so happy you have decided to commit to this time with us here at the farm.

A member shared this recipe with us for Kale and Sweet Potato Frittata from Canadian Living that she tried and loved.

Sweet Potato Kale Frittata

Preheat oven to 350 degrees F. Whisk together eggs and next three ingredients.

Saute sweet potato in 1 tablespoon hot oil in a 10 inch oven proof nonstick skillet over medium heat, 8 - 10 minutes, or until the potatoes are tender and golden; remove and keep warm.

Saute kale and next 2 ingredients in the remaining 1 tablespoon oil, 3 - 4 minutes, or until kale is wilted and tender; stir in potatoes.

Pour egg mixture evenly over the vegetable, and cook 3 more minutes.

Sprinkle egg mixture with goat cheese.

Bake at for 10-14 minutes or until set.


Kale and Kohlrabi Salad

Combine kale, kohlrabi, carrots, dried cranberries and pecans in a large bowl.

In a small bowl whisk together red wine vinegar, Dijon mustard, honey, minced garlic, olive oil, salt and pepper.

Mix dressing with salad until well coated.

Refrigerate at least 2 hours before serving.

Beautiful brussels sprouts, freshly picked.
