What did you do with your radishes last week? Still have them? I found this great recipe for roasted radishes that uses the greens, too. It was delicious!
I used to think of pesto as being the sublime marriage of basil and pine nuts. Period. Then I developed an allergy to pine nuts. Unwilling to give up such a delectable and versatile spread/sauce, I started experimenting with other nuts. I mainly use pistachios or cashews, but walnuts are great, too. Especially roasted. Last week I made nettle pesto and this week I'll likely use the frozen basil we're getting. I've used kale, spinach, parsley, cilantro, arugula, and combinations of different greens. There are so many possibilities! Throw some of your favourites in your blender or food processor and whiz it up. The result will surely be delicious. If you are dairy intolerant, nutritional yeast is a great substitute for parmesan cheese.
Other members have been sending in their own fabulous pesto recipes. Check out these ideas for pea shoot pesto and garlic scape pesto.
I LOVE rhubarb, and I LOVE fruit crisp, and I love trying new recipes. So, when I saw this recipe for Rumchata Rhubarb Crisp, I wanted to try it. I couldn't find Rumchata but Bailey's Irish Cream is a pretty close approximation so I used that. The result? Andy's still talking about it. In a good way. smile emoticon I'm pretty sure I'm going to be making it again for family dinner this Sunday. It is out of this world, especially with some vanilla bean gelato served on top. Yum!
Enjoy a fantastic weekend. Perhaps we'll see you this Sunday for the Father's Day Jamaican Jerk Pig Roast! :)
